Too Many Tamales?

After reading the Gary Soto book, Too Many Tamales, Sandy's crew set out to make their own.  










Fufu

Third graders made fufu--a dish of African origin.  Which the diaspora has brought to Caribbean cuisine.
























Recipe

Ingredients

5 platanos

2 large yuca (wax root or casaba)

Salt

Steps

1.  Set a pot of salted water to boil.

2. Peel and slice platanos and yuca.

3. Put to boil until smooth or soft.

Once cooked, start by mashing platanos.  Once you reach a doughy consistency, start to add the yuca a bit at a time to the platanos. Smash with a pestle and fold the dough with your hands.  Continue to mash and fold until it is a blended dough.  Roll into balls and serve with soup or stew.
